How much pressure can this safely hold?
I heated one side of a 3/4" sch 40 PVC coupling and inserted a soda bottle cap. After it cooled I took out the cap and applied epoxy to the coupling and cap.

Not sure, but I will say that I have mixed results with epoxying PVC. It helps if you roughed up the PVC pretty well.
That aside I bet it would be pretty strong, but would avoid standing behind it.

This one with a similar joint was used to 100 psi without failure, but it does depend on the quality of epoxy used and part preparation.
I've also shot at closed water-filled soda bottles and the overpressure was enough to pop the cap off its threads.
